Istrian cattle is one of three indigenous cattle breeds whose revitalization is directed towards the production and marketing of quality and recognizable beef. As the Istrian cattle are a latematured breed of a slightly slower but longer growth interval, it is important in the fattening of younger cattle categories to understand the principles of dynamics of carcass conformation and tissue growth allometry with respect to the sex of individuals. The aim of the paper is to determine the influence of gender on body conformation and the proportion of commercial cuts in the body. The study included 126 breeds of Istrian cattle bred in Istria, of which 112 were male and 14 female. Cattle were kept in traditional farm conditions, in farmland. Gender has been found to significantly affect the mass of warm and cold, and the carcass class, which can be explained by different dynamics of growth of bulls or cows (heifers). There were significant differences in the mass of commercial cuts of male and female jeniks in almost all measurements, which confirms the significant influence of sex on the proportions of commercial cuts of Istrian cattle. Research should continue on more individuals, especially females, so that they can serve as a waypoint in further affirmation of cattle through the meat production program.
