Beeswax (honeycomb) is a medium in which honey is stored and ripened, and its characteristic chemical composition provides strength and consistency of constructed combs and running of specific chemical processes that occur during ripening of honey in the honeycomb. Adulteration of beeswax (foundations) is long present and growing problem worldwide nowadays. However, there are still no internationally standardized analytical methods for routine beeswax authenticity control. Consequently, there are more than 15 substances of different origins used for beeswax adulteration that are present on the global market, of which paraffin is the most common. Although honey and beeswax represent inseparable in the process of honey production and therefore the quality of beeswax is extremely important for beekeepers and consumers, there are still no data about the impact of adulteration of beeswax on the composition and quality of honey in the available scientific literature. The purpose of this study was to determine differences in the chemical composition and organoleptic properties between the samples of honey stored in the honeycombs built on paraffin foundations and the samples of honey stored in the honeycombs constructed on beeswax foundations made of authentic beeswax. The collected samples of honey were analyzed by classical (reference) analytical methods and FTIR-ATR spectroscopy. The results showed differences and the negative impact of adulteration of beeswax on the composition and quality of honey, organoleptic properties and the normal process of building honeycomb and are proven changes in the process of maturation of honey. Average values of water content of analyzed samples were higher in samples of honey stored in the honeycombs built on paraffin foundation at all locations indicating a slower ripening process of honey (water evaporation) in the samples stored in the honeycombs built on paraffin foundation. The values of electrical conductivity were equal between the honey stored in the honeycombs built on the paraffin foundation and authentic beeswax and it has not been observed significant difference between the samples, while the pH values of the analyzed samples of honey were within the permissible values for honey, but there were observed higher values in honey samples stored in the honeycombs built on adulterated foundations. The spectral variations were also observed in a large number of analysed samples which indicates on altered mechanism of honey ripenig (biochemical processes).
