Sažetak | Sivi puh (Glis glis L.) je naša autohtona divljač, a tradicija lova na puhove prakticira se još od vremena Rimskog Carstva. Iako se meso sivog puha među gurmanima smatra delicijom, nisu provedena detaljnija istraživanje kvalitete ovog mesa. Cilj ovog diplomskog rada je bio utvrditi sastav trupa i fizikalna svojstva mesa sivog puha. U tu svrhu je ulovljeno 10 ženki i 8 mužjaka sivog puha s područja Gorskog kotara. Prosječna masa trupa puhova iznosila je 83,38±7,91 g, dužina trupova 25,96±0,94 g, a randman 38,39±1,55 %. Prosječna pH vrijednost iznosila je 6,38±0,17, a parametra boje L* 36,24±2,07, a* 13,08±3,39 te b* 4,43±1,11. Nije utvrđen značajan utjecaj spola na sastav trupa, izuzev za masu jetre koja je bila značajno veća u ženskih u odnosu na muške jedinke. Ujedno, meso ženskih jedinki je imalo značajno (p<0,05) nižu pH vrijednost te veću vrijednost a* parametra boje mesa. Potrebno je provesti daljnje istraživanje kako bi se utvrdila ostala fizikalna svojstva mesa sivog puha. |
Sažetak (engleski) | Edible dormouse (Glis glis L.) is our autochthonous game species, and the tradition of down hunting has been practiced since the time of the Roman Empire. Although meat of edible dormouse is considered a delicacy among gourmets, till present detailed analyses of its meat quality was not done. The aim of this research was to determine carcass composition and physical parameters of edible dormouse meat quality. For that purpose, 10 female and 8 male dormice were caught in the Gorksi kotar area. Average carcass weight was 83.38±7.91 g, carcass length was 25.96±0.94 g, and dressing percentage 38.39±1.55%. Average pH vale of meat was 6.38±0.17, while meat color parameters had following values: L*= 36.24±2.07, a*= 13.08±3.39, b*= 4.43±1.11. No significant effect of sex was found on analysed carcass traits, while in meat of females was found significantly (p<0.05) pH value and higher a* value of meat color. Further reaserch needs to bed one to determine ther phyisical meat traits. |
