Proteases are one of the most important groups of industrial enzymes that catalyze the the protein degradation. Due to their high yield, low energy consumption, low production costs and simple genetic manipulation, proteases are used in the deproteinization of marine residues for the purpose of obtaining chitin. In this work, the optimization of protein hydrolysis from prawn shells was performed under optimal operating conditions of the tested proteases (T = 40°C and pH = 8). Protein hydrolysis was catalyzed by the commercial proteases Flavourzyme, Novozyme, Neutrase, and Novo-pro D at concentrations of 0.5 U / 10 mg and 0.1 U / 10 mg of waste. For these proteases, the operation stability was examined, and it was concluded that the three-parameter model best describes the inactivation of proteases. In the hydrolysis of proteins from prawn residues, all proteases at both concentrations proved successful, and Novo-pro D and Novozyme were the most efficient and stable and was used in repetitive to determine how many times the same protease can be used for protein hydrolysis. In repetitve experiments with proteases Novo-pro D and Novozyme, used at concentrations of 0.5 U / 10 mg and 0.1 U / 10 mg, it was shown that proteases can be used in several cycles (up to 5 cycles at a concentration of 0.5 U / 10 mg, and at a concentration of 0.1 U / 10 mg for up to 3-4 cycles).
