The aim of the thesis is to get acquainted with the technology of mare's milk production, breed composition of horses, to learn the technology of processing and production of mare's milk products, and to create their own food product. The mare's milk has specific characteristics, especially in relation to the milk of other domestic animals. It is rich in vitamins and minerals. It has a low content of milk fat and a high content of polyunsaturated fatty acids. It has important nutritional and therapeutic properties, which have a very beneficial effect on human health. In addition to the food industry, it has an important role in the cosmetic and pharmaceutical industries. Mare milk has always been prized for its medicinal properties, which made it especially important in the past centuries when the pharmaceutical industry was not as developed as it is today. Today, it is most commonly used in the pharmaceutical industry as a preventative therapy that is obtained by regenerating mare's milk powder. Most of the equine milk processing is in cosmetic preparations such as soaps, shampoos, conditioners and body lotions, creams, face masks and baths. Besides cosmetic products, it can also be processed into food products (liqueurs, chocolates). Very little milk from equidae is processed into products intended for consumption, such as chocolate, ice cream. With the development of modern society and increasing awareness of health and nutrition, because of its nutritionally valuable ingredients, chocolate has become a valuable product in which more than 800 different ingredients have been identified. Today, some cold-blooded breeds find their revitalization partly in milk production. Cold-blooded mares are suitable for milk production because of their size and calm temperament and regular reproduction. The economic profit of milk production from cold-blooded horse breeds could have a positive impact on the current situation in the Republic of Croatia.
